Hi everyone! 👋 I want to share a super easy and quick recipe for a rustic pizza with cooked ham and mozzarella. 😊 It is called “Parigina”. It is a typical Neapolitan rustic pizza, stuffed and covered with puff pastry.
Ingredients:
– 2 rolls of puff pastry
– 200 g (about 7 oz) cooked ham (prosciutto cotto)
– 480 g (about 17 oz) sliced mozzarella cheese
– 1 egg
– 100 g (about 3.5 oz) tomato passata (strained tomatoes)
– Oregano
– Salt
– Extra virgin olive oil
Instructions:
– In a bowl, season the tomato passata with a pinch of salt, a drizzle of extra virgin olive oil, and oregano. Mix well.
– Gently unroll the two rolls of rectangular puff pastry.
– Place one sheet of puff pastry on a baking sheet lined with parchment paper. Spread the seasoned tomato passata evenly over the pastry, leaving a border of about half an inch.
– Sprinkle with some oregano.
– Distribute the mozzarella slices, then the cooked ham, and finally the remaining mozzarella slices.
– Cover with the second sheet of puff pastry, sealing the edges well with your fingers or the tines of a fork.
– With a sharp knife, make some cuts on the surface of the pizza to decorate.
– Whisk the egg in a small bowl and gently brush the surface of the pizza with it.
– Bake in a preheated fan oven at 180°C (350°F) for about 30 minutes, or until the pizza is golden brown and crispy.

This looks like it would be tasty. But the real thing is actual pizza dough on bottom with puff pastry only on top. How does this compare?
