GAZPACHO – Cold tomato Soup!

This is perfectttt for the summers because it’s best served chilled 😍 and it’s super easy to make! And it’s VEGAN!

Recipe: roast 3 tomatoes, 1 bell pepper or 2 mild peppers/chillies and 4-5 garlic cloves.

Remove the charred skin and let it cool.

Add to the blender with 2 more tomatoes, 5-7 basil leaves, 2 tbsp breadcrumbs or half a bread slice, 1/4 tsp cumin powder, salt and pepper, 1/4 cup water.

Blend on high speed and add 3 tbsp olive oil while the blender is running to fully emulsify!

Serve chilled! It’s that easy!!! Serve with toasted breadcrumbs, basil and olive oil.
