Boneless leg of lamb, should I remove the netting?
when I put it in the bag if I should take the netting off should I unfold the roast & open it up, or should I try to seal it like it was in the netting?

I do, I add garlic, rosemary etc and re-wrap with butcher string.

I didn’t but I still froze it to sous vide for Easter. I’ll report back after Easter.

I remove it to trim excess fat on the inside.

If that netting is the same type I get in my lamb legs from Costco, it has rubber band-like bands in it. I wouldn’t want to cook rubber bands with my food, I’d assume they would leave a weird aftertaste. Not to mention the chemicals that could be hiding in those bands from who-knows-where. Wouldn’t chance it.

I just did a turkey breast roast that had netting just like that. I removed it but had to be really careful because the meat started to unravel. If you can season it carefully (maybe before you cut the net) and get it in the bag still wrapped up it’ll set nicely in the cook and slice up really nice when you’re done.
