This is a wine I picked up in my journey to try and get a feel for Loire Chenin Blanc, especially those with some age on it. This is the oldest example I have opened thus far and I must say I am super delighted. This is awesome.

The color of this wine is super beautiful, a deep golden hue, lightly translucent.
Crushed apple or apple sauce (appelmoes if you're Dutch), pommegranate, grapefruit, chalk, licorice, dried raisins and an oyster like salinity.
Super juicy mouthfeel, reminiscient of an ice cold IPA and a hot summer day. Aftertaste is long. I am sipping the last glass on its own, but I enjoyed most of the bottle with an appetizer of Langoustines the size of my sons arm. (He's 2 years old, but still). Grilled those bad boys with a sauce of butter, oil, shallots, soy sauce, mustard, flat leaf parsley and pastis.
Main course was a fillet of seabass panfried on its skin with a nice little rest of the langoustine sauce. Accompanied by butter sauteed carrots and salsify which were glazed at the end by a generous pour of honey.
Some Polenta/Parmezan cheese fries for the carbs (Ottolenghi recipe).
This pairing was delicious, umami really plays a major role here and the chalk like characteristic of the wine sends the connection with the langoustines and sauce into another dimension.
Really happy with this one!
