To me, there’s only one salmon worth eating. This was a 14 pound fish which yielded 11 pounds trimmed. Brine overnight and a homemade marinade. Smoked for about 4 1/2 hours over Apple and Hickory amazing

  4. What temp did you keep for a 4 hour salmon smoke? I often find I risk overcooking it going more than 1.5 hours at a 200-225.

    Real talk how yall do salmon? I was interested then had some “smoked salmon”, it was like room temp at fogo de chao. It was not a fun bite of food.

    Im starting to think that was like “preserved smoked salmon”

    There’s no way smoked salmon has the prestige it has if what horrid mouthful was what it is

    I mean I would disagree with only one salmon worth eating, sockeye is amazing raw. But yes for smoking, Chinook is the best. But those are the only 2 ways I will eat salmon.
