
I ordered a hugeee box of kkultteok without realising how huge it was. I’m going to bring them to dinner to share tomorrow, would like to know the best way to keep these fresh. Would storing them in a cupboared in an airtight ziplock and saran wrapped be ok? (It’s summer here but not too hot indoors). Just need them to last till tomorrow evening. Ideally don’t want to have to heat it up before dinner because it’ll be at someone else’s home

Fridge cause food safety.
You can just warm up if they a bit too firm before you go.
You should be ok leaving it out for one day. Maybe steam them if they seem too hard…
Definitely refrigerate them. If you keep them in room temperature, it may spoil and get your friends/family sick.
Tteok is never stored in the fridge. It loses moisture and becomes hard faster.
I would keep in the freezer, double wrapped air tight with a drop of Sesame oil. It’s easier to separate when reheating. I’d reheat in microwave covered with a damp towel or steam in a rice cooker. Tteok in a bowl and water around it to steam.
You CAN keep it out at room temp. It has a lot of sugar which works as preservatives, like cookies and cakes. But it will go bad since unlike cookies and cakes it does have moisture. Im unsure if itll be ok til tomorrow night. I think it’d be ok…. but not as soft and chewy. But you can try it if you want to.
FYI, day old injulmi and other sweet rice cakes like kkulteok can be pan fried. It’s better to fry bc it doesn’t have much moisture (same concept as using day old rice for fried rice) my mom used to make waffles with it. She’d also make fresh kongomul flavored whipped cream and serve it with fruit and ice cream.
They’ll be trash by tomorrow. They’re same day only.
It could not be the best for food safety, but literally none of my family (Korean) from parents to grandparents has ever put that it the fridge or freezer. Counter top has always been fine for a day or two.
if it’s only one day, you can keep them in the room. but keeping them in refridgerator is totally okay. Most Korean keep Tteok in fridge
