Ingredients:
For the Chimichurri Sauce:

½ cup fresh parsley, finely chopped
¼ cup fresh cilantro (optional for extra depth)
3 cloves garlic, minced
½ tsp red pepper flakes (adjust for heat preference)
½ tsp dried oregano
¼ cup red wine vinegar
½ cup extra virgin olive oil
Salt & black pepper to taste
For the Skirt Steak:

1 skirt steak (or any cut of your choice)
1 tbsp olive oil
Salt & black pepper to taste
½ tsp garlic powder
½ tsp smoked paprika (for a subtle smoky flavor)
For the Grilled Rapini (Broccoli Rabe):

1 bunch rapini (broccoli rabe)
1 tbsp olive oil
Salt & black pepper to taste
Instructions:
1️⃣ Make the Chimichurri:

In a bowl, mix parsley, garlic, oregano, red pepper flakes, and red wine vinegar.
Slowly drizzle in the olive oil, whisking continuously.
Season with salt & black pepper, then let it sit for at least 15 minutes for the flavors to meld.
2️⃣ Grill the Skirt Steak:

Pat the steak dry, then rub with olive oil, salt, black pepper, garlic powder, and smoked paprika.
Preheat your grill to high heat (~450°F/232°C).
Grill for about 3-4 minutes per side (for medium-rare), or longer depending on your preferred doneness.
Remove from heat and let it rest for 5-10 minutes before slicing against the grain.
3️⃣ Grill the Rapini:

Toss the rapini with olive oil, salt, and black pepper.
Place on the grill over medium heat, cooking for 3-4 minutes per side until slightly charred and tender.
