Ran a busy bbq joint for a decade and took a big break from the bbq life after getting completely burnt out in 2021. Moved to New Orleans in 2022 for a change of pace and to help a friend open a (non-bbq) restaurant. A year and half later and I’m working for an excellent Asian themed pop up. Bought a Yoder 640s last month so I can spread the word of good bbq and make some cash while I’m at it heh.

New Orleans is severely lacking in decent smoked goods imo. For the initial smoke I took some inspiration from the pop-up I’m at and did a mustard glue/szechuan style rub. Pretty happy with the results. And glad to see those old muscles haven’t atrophied after years of non-use.

    Those look great. Been looking for a different rib rub and this one has me interested
