Yes, of course there are other styles of omakase/chef’s choice. Plates like this are common, it just depends on the chef. Many sushi chefs in non-traditional places are happy to do this if you ask, and settle on price before they begin.
Don’t bother roasting me. I’ve had plenty of this style and find it more ienjoyable than the formal style
(Definitely not dissing traditional, just mentioning that there are several ways for a chef to share something special)
