white onions, finely chopped
carrots, finely chopped
celery, finely chopped
garlic, finely chopped
olive oil, for cooking
pinch of salt

The general rule of thumb suggests a ratio of 2-1-1, meaning 2 parts onion, to 1 part carrot, to 1 part celery. However, you can use use an equal portions of each, or more of one vegetable than the other, depending on your tastes!

  1. I love the way you chopped those veggies! My husband is a chef and he never did it that way or showed me! Now I'll never do it another way and can easily make these to save and store in the refrigerator to cook with later.     This is my general go to soup mix. I usually use a medium sized carrot or 2 baby and 1 medium onion. The celery depends on how I'm feeling on the day ๐Ÿค”
    As far as the garlic goes, we both know garlic cloves come in odd sizes depending on the variety of the garlic. I try to avoid commercially grown and if available opt for organic heirloom variety. The flavour and aroma is far more superior.

    My mother would make garlic sandwiches. Just slices of garlic with a sprinkle of salt on buttered bread. Whatever she was trying to keep at bay, it worked, including me โ˜น๏ธ.
