Very much depends on the burger for me, some combos are better with it, others are not.

Usually always cheese, but there was a smash burger I had recently and forgot to ask for cheese and it was one of the best burgers I’ve had, so for that one place I’d stick with no cheese.

Then we tried havarti. Oh my, delicious!
