Moe Fares has returned to his food truck roots this season.

He started Kabab King on the streets of Sioux Falls in 2018 and switched to a restaurant and market selling Mediterranean groceries on East 10th Street in 2021 but closed that at the end of 2022.

This summer, he opened King of Gyros in a vibrant red trailer that he built out himself.

Fares has been focusing on festivals in the area and the late-night bar crowd on the weekends in downtown Sioux Falls. That’s where the biggest crowds are, he said.

King of Gyros often can be found Friday and Saturday nights along 10th Street just east of Phillips Avenue, next to Lewis Drug.

Fares feeds festival-goers and bar-hoppers his signature gyros made with lamb, beef or chicken, and the menu also includes shawarma, chislic and french fries. His sons, who have other full-time jobs, help.

Cooking is a second career for Fares, who was born in Lebanon. He worked for 27 years as a senior systems analyst for Qatar National Bank, one of the largest banks in the Middle East. The family moved to Sioux Falls because his wife’s parents lived here.

Fares decided he was ready for a career that was “completely different,” so he started the food truck.

Saturday, King of Gyros will be one of five food trucks at the annual 605 Made Night Market. For the market, Fares will be selling his three kinds of gyros.

The free event, featuring more than three dozen makers and live entertainment, runs from 3 to 9 p.m. in the Raven parking lot at Sixth Street and Phillips Avenue.
