I get that not everybody does it the same, but this literally inspired me to go buy and cook a brisket this weekend just to atone for this cow being dishonored.

    Yeah that’s actually inexcusable. From a BBQ joint I expect bark. I don’t need to comment on anything else because the total result is obvious to anyone who’s looked at smoked meat before, much less eaten it.

    I’m guessing they didn’t throw enough wood in the Southern Pride, and cooked too low. Yes, there’s such a thing as too low and slow, and it shows in poor bark development like this.

  7. Honestly looks roasted rather than smoked with unrendered fat. Someone needs to have a chat with the first about smoking, and second about marketing.

    A lot of bbq restaurants aren’t amazing, they are just mass producing with low effort. Its part of why i started smoking.

    People will eat it.

    Looks like they put it in oven or if they put it in some sort of smoker it was a heat source only and no wood.

    If this is just oven roasted brisket meant for more of a Sunday roast situation then it’s fine. If it’s bbq then not a fucking chance and I’m not paying 19.99 a lb either way.

    maybe someone can know what smoker they use from the photo of the food inside the unit with the two racks

    Example:

    We have been here 3 times the past 2 months. One time they were closed because they ran out of BBQ. The other two times were both very good! We have had the sampler, ribs, wings and nachos! The ribs are excellent! The wings were excellent as well. We were not fans of the brisket or pulled pork but the loaded nachos were excellent as well. I tried the peanut butter dessert and it was just ok. We will stop and eat here again on our next trip!

    Reminds me of a food truck festival in Detroit, this rig had stickers and signs saying “best Detroit style BBQ”. “Voted best ”

    Was inedible.

    Fresh from the smoker? This at most is a oven cooked with liquid smoke in the marinade.

    Where is the smoke ring? The bark is nonexistent except that one small strip down the center and your fat didn’t render all the way maybe 5.99 a lb. for a brisket that looks like a chain restaurant smoked it.
