**Tahini and Almond Semolina Halva Recipe**

**Ingredients:**

– 1.5 cups granulated sugar
– 1.5 cups water
– 1 cup milk

– 2 cups semolina
– 1 tea glass flour
– 40 grams sliced almonds (or pine nuts as an alternative)
– ½ Turkish coffee cup tahini (optional)
**Instructions:**
1. **Prepare the Syrup:** In a small pot, combine sugar, water, and milk. Heat over medium heat, stirring until the sugar dissolves. Do not boil. Once the sugar is dissolved, remove from heat and let it cool.
2. **Roast the Semolina:** In a non-stick pot, melt the butter and vegetable oil. Add semolina and flour. Stir continuously over medium heat.
3. **Add the Almonds:** Once the semolina starts to change color slightly, add the sliced almonds. Continue roasting until you achieve your desired color.
4. **Add the Syrup:** Lower the heat and slowly pour half of the cooled syrup while stirring to prevent lumps. Then, add the remaining syrup and continue stirring.
5. **Incorporate the Tahini:** Once the halva absorbs the syrup, add tahini and stir on low heat until fully combined.
6. **Let It Rest and Serve:** Remove from heat and let it rest for 15-20 minutes. Stir again before serving. You can portion it into small bowls or shape it with a spoon. Garnish with ground pistachios and serve.
