this kbbq restaurant has delicious galbi jumulluck, it’s my absolute favorite kbbq meat so far _^ unfortunately i’m not familiar enough with korean cuisine to identify which flavors and ingredients are present in this marinade :c all i can distinguish is that the marinade is thick and pasty, is bright red,
and has a subtle spicy heat to it. does anyone know how to make this marinade/dish or have any good guesses as to what might be in it? maybe gochujang and something else? all help is appreciated!

Sounds like Korean chili pepper paste. A staple in Korean pantries. It’s fermented, earthy spicy. You can find it at regular grocery stores now.

1 tsp ginger (for beef but ½ if using pork)
1 Tbsp maesil (plum extract if you can’t find green plums/Asian plums/ume)
    1 Tbsp minced garlic
    3 Tbsp gochujang
    2 Tbsp water
    1 Tbsp soy sauce

Best to marinate 24hrs. If meat is from a tougher part let it marinate longer.
