  2. I think you would be better off if you switched pans and had your hot stock in the sauce pan and cooked your risotto in the sauté pan. This allows for better toasting on the rice, more caramelization on the mushrooms and more even and rapid evaporation which helps you develop that starch without over cooking the rice.
    Looks fantastic though!! Love your content.

  3. We love participating in murder mystery dinners. So much fun! I wish we lived closer and had a dog sitter.
