

I see that they are the recommend noodle for the dish but the curly noodle just have so much going for them. The straight noodles remind me of pasta and get mushy quick.
Am I alone on this. Am I missing something?
I got it with the normal noodles but got the curvy noodles on the side.

I personally dont like them too. I don’t like how thin they are and the texture. I prefer the thicker noodles used in iekei and jiro.
Thin noodles are to tonkotsu as potato buns are to hamburgers. They’re great together if you prefer that style of bun. But, some people like egg buns, pretzel or god forbid a lettuce wrap. I see the pasta reasoning, and thin noodles do quickly soak up a lot of broth. Also depends on hydration of the noodles dough and speed of eating. Thicker noodles normally take a little longer to soak up broth. Everyone has their preferences, if you like tonkotsu and thick noodles try finding a place that sells Jiro style then thank me later 😊
Different noods for different doods (or doodettes, I dunno). Thin noodles are just the classic option – as long as you’re not asking for rice noodles or something, it’s all ramen and it’s all good.
Sounds like Iekei-style ramen might be something you like if that’s available to you – those have some curly and kinda thick noodles that should hold their texture.
I don’t like the noodles that come with Tonkotsu either. They are called Hakata style noodles. I like the curvy/wavy noodles like you do. Those are typically used in Miso based ramens influenced by Sapporo style ramen which uses said wavy noodles.
I almost always request those noodles if I know the bowl will come with Hakata style ramen.
I’m not sure where you are having this issue but I have the opposite experience. Most of the time proper hakata (straight white) noodles hold their bite way better than curly noodles and I prefer it. I’ve had hakata that got mushy before but they are not the norm
Many restaurants in the states use noodles with egg in it which always fall in the yellow curly noodles category and I find they’re always subpar. When I think of ramen traditionally, I think of low hydration alkaline noodles that stay al dente in super hot soup.

Agreed. My favorite spots are the ones with curly chewy egg noodle. Yummm.

I agree! So much so that when I’m in a new city looking for nearby ramen places in a pinch, I won’t go if wavy noodles aren’t an option! (Unless it’s an elite place).
