Easter-everything is ridiculously expensive, so I decided to make some sourdough hot cross buns. It's very rare that my family will bother to try things that I make but they all wanted in on this, one of the best things I've made in a while

    Difference though is that I only had 2 eggs, so substituted the extra egg yolk for 10g of butter in both batches of dough. I used 140g raisins (too much honestly – might add some white chocolate next time), as well as strawberry jam for the glaze instead of apricot

    proofed for: 3 hours on heating mat initially, 4 hours off (including second rise)

    You can cut a small piece off the corner of a plastic bag to make a piping bag.
