Hello everyone!! As winter draws to an end I have found myself struggling with cooking inspiration. But this weekend I decided to make up some soup, and I’m glad I did. This turned out perfectly and has been even better warmed up! I made this for the first time when I received leeks from the food bank a long time ago and it is my go to recipe now. If you don’t like leeks, that’s no problem they are easily omitted and replaced with a small amount of diced onions and maybe some chopped spinach or no greens at all.
I can give a vague list of ingredients : Red potatoes chopped(about 3 lbs), 3 leeks, chopped, a pound of pork sausage(the kind doesn’t really matter or you can use chopped ham), a few cups of milk, half and half or heavy whipping cream(whatever you happen to have, can use more or less to save on the budget and just leave more water in it), a couple tbls of butter, some thyme, salt and pepper. It takes a bit to get made up but I think it’s totally worth it!!
