Greek Salad Wrap
Makes a tasty lunch for one, or cut it into pinwheels and serve as a delicious appetizer.
To make it you’ll need:
Tzatziki:
¼ large cucumber (shredded & drained)
160 grams Greek yogurt
1 garlic clove
1 teaspoon chopped fresh or dried dill
Sea salt
Pepper
Wrap:
2 tortillas
75 grams feta
1 teaspoon dried oregano
5 romaine lettuce leaves
2 tablespoons diced cucumber
2 tablespoons diced cherry tomato
1 teaspoon diced red onion
Instructions:
1. Set your oven to grill (200’C / 392’F).
2. Crumble the feta on top of a tortilla. Sprinkle with dried oregano.
3. Broil the tortilla for 3-5 min until the cheese is melted and the tortilla is golden and crisp.
4. Spread 3/4 of the tzatziki on the other tortilla and then top with the grilled cheese tortilla.
5. Add gem lettuce, red onion, cherry tomatoes, cucumber, and more tzatziki to the bottom half.
6. Roll the wrap tightly.
7. Enjoy.
