Ingredients:
For the Falafel:
250g chickpeas (soaked overnight)
½ cup fresh cilantro, chopped
2 small onion, chopped
½ tsp ground cumin
1/2 tsp ground coriander
½ tsp baking soda (for extra fluffiness)
1 tsp salt
1 tsp black pepper

Instructions:
1. Soak the Chickpeas
Rinse and soak the dried chickpeas in water for at least 12 hours or overnight. They should double in size. Drain and pat dry.
2. Blend the Ingredients
In a food processor, add chickpeas, cilantro, onion, cumin, coriander, salt, and black pepper. Pulse until the mixture is grainy but holds together
Transfer to a bowl, cover, and refrigerate for 30 minutes (helps firm up the mixture).
3. Shape the Falafels
Use a spoon or falafel scoop to form small balls or patties. If the mixture is too wet, add a bit more flour.
4. Cook the Falafels
Deep Frying:
Heat vegetable oil in a deep pan to 350°F (175°C).
Fry falafels in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels.
Baking (Healthier Option):
Preheat oven to 400°F (200°C).
Place falafels on a lined baking sheet and brush with oil.
Bake for 20-25 minutes, flipping halfway through.
Air Frying:
Preheat air fryer to 375°F (190°C).
Lightly spray falafels with oil and air-fry for 12-15 minutes, shaking the basket halfway.
