    First attempt at Shokupan (and maybe last), had to improvise a way to proof in cold weather, no loaf pans but made do. It was fun and learned a lot. Different mixtures proofed differently and definitely overflowed the pan during baking.

    73% hydration, various flavors/fillings (Honeydew, Pandan, Durian, Taro) The separation from the laminated dough/fruit paste reduction was disappointing, but tasted great.

    Tangzhong 5:1 and Poolish 23%
