    What did you smoke this on? Bark looks great! Brisket looks bomb! I have a Traeger and a WSM. The WSM is how I obtain the dark bark, the Traeger does great but the bark isn’t as profound in comparison.

    my sister is remodeling her home so my niece is staying with me, and every now and then I’ll be doing a long smoke and I’ll just give her little bites at night. she can’t stop talking about it 😂

    Good job. I started doing long overnight holds in a low oven so don’t have to get up at 3am anymore.

    Looks awesome. I use a WSM and get the brisket on around 9-10 at night. Let it go all night, pull it at 203 around 12 o’clock. Then I wrap it in butcher paper and leave it in the oven set at 160 for 3-5 hours for a 6pm dinner. Typically turn the oven off an hour before we slice it.

  13. I bought a wifi smoker. If I wake up at 3 a.m. and see it’s getting close too fast I just turn the grill down to 180.
