    By now I’m pretty much convinced that the 01 Yquem is best drunk alone. I found the wine has too much going on – stewed apricots, caramel custard, vanilla, honeycomb, an array of spices and a mild salinity that other flavors simply take away from the depth of complexities of this wine.

    For example, in my limited experience with Sauternes, some sort of blue cheese or salty-creamy cheeses would almost always go well with them – but not the 01, which seems to just have notes that are either on par or superior to the foods I’ve tried it with.

    Pictured has to be one of my less-favorite pairings with the 01 – oreo ice cream cake.

    You’ve got to match sweetness levels and weight of the dish, or juxtapose in extremes. Oreo is not the answer here.

    Try:
    Peach cobbler with clotted cream

    Grilled peaches with whipped ricotta honey and granola

    Creme brûlée

    Put a half oz on top of vanilla ice cream like a syrup

    I tried a recent vintage with lobster it was simple and great. Dont overcomplicate pairings – thr greater the wine the worse it can get, as you said it too.

    Fine whites both dry and sweet are more prone to this

    I think d’Yquem should be drank by itself. It’s hard for me to imagine any food that would compliment it. Hmmm….maybe apple pie or apricot crumble cake??

    d’Yquem is already dessert!!

    My most successful pairing Yquem has been fresh, pan fried fois gras, with toasted brioche, caramelised apples and veal jus. The choice of apples is important – not too sharp.

    So store cupboard items, basically 😉

    Imho you shouldn’t really drink “dessert” wines with dessert. Try strong cheese, or foie.

    Port is the only wine that could potentially work, and even that’s a fairly long shot. Sauternes best with fruit desserts.

    I would have drank it solo or with something much fruiter than that dessert. Super jealous you drank it either way.

    Yea absolutely Yquem IS the dessert or at least it’s a separate dessert to other things. I’ve sometimes enjoyed it with something quite dry and pastry based, but far more often I’d just rather totally savour it alone. But if there was something that I would expect to absolutely kill the entire experience it would probably be something like a giant slab of oreo ice cream cake.

    I’d pair with cheese. Traditional desserts for me make for a too sweet combo.

    There is a misconception that Sauturnes needs to be paired with a sweeter dish. That’s totally far from the truth.

    The best pairings are usually, foie gras, and blue cheeses are great pairings,

    These days I tend to start the meal with Yquem without anything else – like the British drink port before dinner. It’s so freaking amazing and your tastes are not too fresh anymore after a number of courses.

    Okay, I have to ask: has anyone on this sub ever bought Yquem any other size than half bottles? I swear 90% of half bottles we see are Sauternes!
