A celebrated South Beach favourite, Estiatorio Milos, will open in West Palm Beach on Friday, February 7, bringing its world-renowned Greek cuisine to the One Flagler building.
Founded by chef and restaurateur Costas Spiliadis in Montreal in 1979, Milos has grown into a global destination with locations in New York, Miami, London, Athens, Dubai, Los Cabos, Singapore, and Toronto, with upcoming openings in West Palm Beach and Los Angeles.

Milos is celebrated for its dedication to fresh, high-quality ingredients from local fishermen and farmers in Greece and the Mediterranean. The menu features signature dishes such as tuna tartare drizzled with Milos’ exclusive extra virgin olive oil, whole fish baked in sea salt or grilled, Greek spreads, and the beloved astakomakaronada—a rich lobster pasta.
The “Astakomakaronada-Lobster” pasta features a hearty steamed lobster and linguine pasta covered in a savory mixture of lobster bisque and authentic tomato sauce.
For dessert, guests can enjoy traditional Greek yogurt with walnuts and thyme-infused honey from Kythira or the Baklava Kaimaki, a decadent blend of artisanal ice cream, honeyed baklava, and ekmek kataifi. The restaurant will also feature an extensive selection of Greek wines, highlighting indigenous grape varieties such as Assyrtiko, Xinomavro, and Agiorgitiko.

Designed by Tara Bernerd & Partners, the new West Palm Beach location offers a spacious, open-plan dining area, a stylish bar, and a reimagined version of Milos’ signature staircase, adding an elegant and dramatic touch.
