Recipe:
“Mexican” rice – add 2 tablespoons olive oil to a pot and toast 2 cups of basmati rice. Add 2 cups of water, 8 ounces of crushed tomatoes(I didn’t have tomato sauce on hand), and two tablespoons of chicken bouillon. Bring it to a boil and leave it uncovered for 10 minutes. Add 1.5 more cups of water, bring it back to a boil and put the lid and put it on low heat for another 10 minutes.let it sit covered for 20 minutes and it’s done!
Chicken – diced up 40 oz of chicken breast, coated in two tablespoons of olive oil and enough pollo asado seasoning to give it a nice orange color (seasoning from Sam’s club). Cooked it in a skillet in batches to give the chicken some color.
Beef – I used 3.5 pounds of 93% lean ground beef. Straight into the skillet without oil, there’s enough fat in the meat for my liking. Also cooked this in batches as my skillet cannot fit that much beef. In total I used two packets of siete mild taco seasoning. I don’t add water and I don’t drain the meat, just my preference.
Onions & peppers – threw 2 chopped yellow onions and 2 chopped bell peppers in the same skillet, no additional oil needed to sautee them and they got some residual seasoning.
Jalapeño avocado sauce – chopped up 2 smaller avocados (265 grams total), 1.5 jalapeños with seeds (I like the spice), some cilantro, one garlic clove chopped , one tablespoon of white vinegar, a quarter of a yellow onion chopped, juice from half a lime, a cup of water, and a quarter cup of non fat Greek yogurt. Put it in the food processor until smooth.
Once I’m about to eat one of the meals I’ll add an ounce of Kraft 2% Mexican shredded cheese and two tablespoons of light sour cream with a bit of the jalapeño avocado sauce.
Note: I realize there is an absurd amount of beef. I swear there are onions and peppers under there. I didn’t realize I didn’t have enough containers laid out and I had already portioned out the rice and peppers. Feel free to judge me.

Shit looks good
Do you just heat it up with the guac and sour cream in there? Or do you scoop it out and then put it back?
