I finally did it! Eid Brisket came out really tender

I’ve been reading the posts on here for a while and finally took the plunge after smoking a few points (lucky to live close to an HEB where they sell points).
– 15 pounds and took off about 1.5 off fat during the trim – USDA Prime – Dry-brined uncovered for two days with Salt Lick’s rub and no binder – Smoked for ONLY 7 hours at 250 (pellet grill) – Let it rest for 5 hours in a hot/dry bag and wrapped in a towel.
The brisket ended about 4 hours faster than I had expected. I was really nervous that it would come out tough and dry, but it was the exact opposite! Felt like an Eid miracle, and it was gone within 30 minutes.
I don’t understand why it finished so fast – it didn’t even hit a stall point. Usually, my ribs and points hit a stall and I have to wrap them. I wrapped then it was probing like butter and hit 208 internal. Thoughts on this would be appreciated.
For the knife folks – my meat-slicing knife was duller than expected. Will get it sharpened.
I appreciate everyone’s posts in this sub. They have been inspiring and I can’t wait to cook my next brisket!

I think you ended up doing hot and fast, and your smoker’s ambient probe is either dirty, lost calibration or by design located at a spot that isnt measuring what’s happening at the grate. Consider looking into the Thermoworks Square Dot, you’ll likely find that when your smoker says 250, it’s really 325: https://www.thermoworks.com/square-dot/

Wow, yesterday morning saw a bunch of people carrying food across the street to the mosque, if I’d known there was brisket like that I would have followed them!
