It all looks really good, the presentation and the photos are great! but my question is, why does the color on the photo change to brighter and more vivid when I enlarge the photos (as in on my phone with my fingers enlarge them)

Nice photos. Your highlights came out a little hot in all 3. You can see the salt lose some detail in the direction of the flash. Was the flash diffused? You could try that if not.
