Add stuffed peppers to your weekly rotation. They’re refreshing, satisfying, hot and delicious. Perfect for on the go meals! I used lean turkey and veg to lighten up this really healthy meal.

5 bell peppers
1/2 onion
3 scallions
4 garlic cloves
5 mushrooms
2 carrots
1 celery stock
2 tbs herb de Provence
2 tsp salt
1 tsp pepper
2 tsp chili flake
2 tsp lemon pepper
1 cup brown rice
3/4 lb turkey
Tomato sauce/ketchup (just enough to coat the tops of the peppers)

Chop all your veggies into small pieces. Add everything else to the bowl. Mix with your bread whisk until combined. Prep your peppers by cutting the tops and hollowing out the centers. Stuff them with the mixture, put the tops back on and add tomato sauce or ketchup to keep them from drying out.
