I know there are thousands of pancake recipes, but I think I hacked one that makes soft, fluffy and thick pancakes and is nutritious and low cal at the same time🥳
500g medium firm tofu
3 eggs
350ml of milk (I used skim dairy, but any will work, will just affect the protein amount)
150ml of water
Add these to a blender and whiz them up till smooth
Pour into a big bowl and add
200g oat flour
60g plain flour
60g protein powder ( I used Pure Product Vanilla casein powder, but I imagine any would work, might just need to add a touch more liquid for whey powder)
10g psyllium husk
20g ground flaxseed
2 tsp baking powder
1 tsp baking soda
2 tsp vanilla extract
You can add sweetener of choice if wanted
Whisk this together and let stand about 15 minutes. It will thicken up a bit.
On a low to medium hot non stick pan, scoop about 1/4 cup of mix for each pancake and pop a lid on. Cook for a couple minutes, then flip and cook another couple minutes without the lid.
I made 23 pancakes out of this batch. Macros for one in last picture + 2.5g of fibre in each!
3 of these, with 100g of 0% greek yoghurt and 150g of mixed berries is around 360kcal. A win if you ask me.
