these Persian dishes are easy, healthy, and delicious! Kabab koobideh (but deconstructed) and mast-o-khiar (Persian cucumber yogurt dip) are traditional Persian cuisine and I’ve adapted them to be quick and easy and perfect for a weeknight dinner. flavorful spices, fresh veggies, cool tangy yogurt, and crispy ground meat – this one is delicious and I hope you enjoy it!

Ingredients for the deconstructed kebabs:
2T neutral, heat tolerant oil (we used avocado)
1lb ground beef (85/15 or higher fat)
1lb ground lamb
1 large onion, grated & drained
4 garlic cloves, minced or grated
1 tsp salt
1/2 tsp black pepper
2 tsp turmeric (bump this up if you like it even more flavorful!)
1T sumac (bump this up if you like it even more flavorful!)
1T garlic powder
1C walnuts, chopped
3/4C raisins
Mint leaves to top
Pomegranate molasses to top
For the cucumber yogurt dip:
2C Greek yogurt
1 large English cucumber or several small Persian cukes
1/4 C rough chopped mint (adjust up or down, to taste)
1/2C roughly chopped walnuts
Salt & pepper
The juice of a lime

Wow those looks SO good. I’ll be trying those for sure. Such simple ingredients and yet so complex. I’ve never purchased sumac, what does that taste like?
