Todays work.

In my small little bakery. Todays work:
Caramel sour green apple & lavender + honey ready to mature in the fridge. And earl grey about to be baked off.

I time my egg white mixing & use boxes egg whites and a Swiss meringue. I also macranage in the mixer! It's saved my wrists.
