The Best baba Ganoush – recipe below – this is how to make baba ganoush a fantastic aubergine recipe to make a tangy healthy salad that is a perfect dip.

Serves 4 as a meze

3 aubergines
2 tomatoes, deseeded and finely chopped
½ red onion, finely chopped
1 clove garlic, crushed
A small handful of finely chopped parsley leaves
The juice of a lemon
2 tbsp pomegranate molasses
80g pomegranate seeds
3 tbsp olive oil, plus extra for drizzling
Flat breads to serve

1. Pre-heat the oven to 200c fan. Prick the aubergines with a knife to let the steam
out and place them into a roasting tin. Pop into the oven and roast for 1 hour or
until tender. Once cool to touch, scrape out the flesh of the aubergines and
place it into a sieve over a bowl so the excess moisture can drain. Leave for 5
minutes.
2. Transfer the aubergine to a mixing bowl and add the tomatoes, red onion, garlic,
parsley, lemon juice, pomegranate molasses and olive oil. Season with plenty of
salt to toss together. Transfer to a serving dish and top with the pomegranate
seeds. Give the baba ganoush a final drizzle of olive oil and serve immediately
with flat breads.
