Viral Dubai Chocolate Brownies
Ingredients
Brownie base:
3/4 cup dark chocolate
3/4 cup unsalted butter
1 cup sugar
2 eggs (room temp)
1/2 cup + 1 tbsp plain flour
1 tsp baking powder
2 1/2 tbsp coca powder
3/4 cup chocolate
Pistachio Knafeh filling:
200g Phyllo dough/ Kadayif
1/2 cup pistachio cream
1 tbsp tahini
Soft Chocolate Ganache:
150ml Double Cream
200g chocolate
Method
Start by melting chocolate and butter over double boiler or in the microwave, beat the sugar and eggs with electric mixer until fluffy then add the melted butter and chocolate give it a mix with a whisk then sift in the dry ingredients, add the 3/4 cup chocolate and mix with the whisk/spatula until combined.
Put the batter in a lined tray, mine is 25cm.
Bake for 35 min in a preheated oven gas mark 4/ 350f/ 177C
While the brownie is baking make the filling, by shredding phyllo dough/kadayif, in a pan over medium low heat add butter, once melted add the kadayif toss until brown and crispy, take it off heat add the pistachio cream and tahini, mix well.
Make the ganache by heating double cream until boiling, add chocolate cover for 15min then mix until combined.
Add the pistachio kadayif filling on top of cooled brownie. top with ganache do any decoration if you like then refrigerate 4-6hrs or until ganache is set.
Before serving I suggest to let the brownie come to room temp so that the brownie is nice and soft. Cut into slices and enjoy 😊
