Ready for a tasty twist on an Italian classic? We’ve combined our love of pasta with the famous Caprese salad to create this Penne Alla Caprese.

Cook Time: 15 mins

Ingredients:
160g Napolina Penne, cooked as per packet instructions
1 tbsp Napolina Olive Oil
Drizzle of Napolina Roasted Garlic & Herb Olive Oil
250g cherry tomatoes, sliced in half
2 cloves garlic, finely chopped
1 tsp oregano
125g fresh mozzarella or mozzarella pearls
Handful of fresh basil leaves
Salt and pepper to taste

Preparations:
1. In a frying pan add the Napolina olive oil followed by the garlic and fry for a few minutes until soft and fragrant
2. Then, add in the cherry tomatoes, oregano and salt and pepper to your taste and cook for around 6–7 mins until the tomatoes soften.
3. Add in the cooked Napolina penne pasta and a drizzle of Napolina Roasted Garlic & Herb Oil and toss together
4. Finally, add in the mozzarella and basil leaves and serve up into two bowls to enjoy immediately.
