Focaccia Sandwich 🥪
Ingredients
For Hara Channa Hummus
Hara Channa Boiled – 1 cup
Garlic cloves – 2 small
Extra virgin olive oil – 2 tbsp
Ice cubes -3-4
Coriander – 1/4 cup
Curd – 1 tbsp
Lemon juice – 1 lemon
Salt & Black pepper to taste
Water for blending
For sandwich
Extra virgin olive oil – 1 tsp
Onion rings – 1 medium size onion
Tomato slices – 1 medium tomato
Avocado slices – 1/2 avocado
Baby Spinach – 1/4 cup or 10-12 leaves
Salt & Black pepper to taste
Feta cheese – 1/2 tbsp to top off
Method
For Hara Channa Hummus
🧄Add all the ingredients in the blender and blend till smooth.
For Sandwich
🥪Slice the focaccia bread in half and then spread olive oil and toast the bread
🥪Once toasted spread the hara channa hummus on the lower slice and layer with onions, avocado and season with salt and black pepper.
🥪Then layer the tomatoes and season with salt and black pepper and then add the baby spinach and top it off with feta.
🥪Spread the hara channa hummus on the top slice and close the sandwich.
🥪 Cut from the centre and dig in!
