INGREDIENT LIST:
2lbs cleaned chocolate clams(you could use little neck, middle neck or razor clams instead, cleaning procedure may be a bit different, shoot me a message if you need help there)
Toppings for the clams:
2 tbp of each red and green bell peppers
2 tpb red onion
2 tbp english peas fresh
12 pcs orange segments
quality sea salt to taste
For the “baja” nuoc cham:
8 limes juiced
1/2 cup light simple syrup
2 tbp chopped garlic
3 tbp chopped cilantro
2 tbp chopped ginger
to taste ground arbol, morita and ancho chiles
1/4 cup fish sauce(but add in a few times, check for saltiness level before fully committing to the amount so it’s not overly salty)
