🍲 Red Lentil Soup Recipe from a Professional Turkish Chef
Ingredients:
1 cup red lentils
1 onion
1 carrot
1 tablespoon tomato paste
2 tablespoons vegetable oil (preferably olive oil)
1 teaspoon salt
1 teaspoon cumin
1 teaspoon black pepper
6 cups hot water
For topping: 1 tablespoon butter + red pepper flakes (optional: dried mint)
Instructions:
Chop the onion and carrot.
Add the oil to a pot and sauté the onion and carrot.
Add the tomato paste and stir for 1–2 minutes.
Add the washed lentils and pour in 6 cups of hot water.
Add salt, cumin, and black pepper.
Once it comes to a boil, lower the heat and cook for 20 minutes.
Blend the soup until smooth, then turn off the heat.
In a separate pan, melt the butter and add red pepper flakes, then drizzle over the soup.
Serve hot, optionally with a slice of lemon on the side.
