    Only suggestion for next time is to sear around the sides to get a perfect rendering on some of that fat, and that’s honestly nitpicking atp. Good job

  6. The meat looks good (beautiful, honestly), but your cutting skills are questionable. Cut across the grain not with it.

    9.9/10 would still eat.

    even though I personally go more medium than this, but the technique to get this color on the crust while keeping the meat that pink wall to wall is amazing! I don’t think I have ever seen such a contrast and definitely don’t know how to do it!
