INGREDIENTS
2 cauliflower heads, cut into florets
4 T olive oil
60 g unsalted butter
4 large leeks, rinsed and halved lengthwise and sliced
2 garlic cloves, minced
6 sprigs thyme
2 t salt
2 t white pepper
450 g potatoes, peeled and diced
400 ml long life cream
2 t ground nutmeg
For the pesto
100 g unshelled pistachio
100 g watercress
50 g Italian parsley
200 ml olive oil
2 lemons, zested and juiced
Sea salt and pepper
For the matzo croutons
4 sheets matzah
3 T olive oil
2 T garlic powder
