Hearty Legume Soup Simple ingredients, rich flavors.
This recipe is the ultimate comfort food healthy and delicious, perfect for any day!

Ingredients:

Legumes & Grains:
   •   ½ cup rice
   •   ½ cup lentils
   •   1 cup red lentils
   •   1 cup cooked chickpeas(or 1 can organic optional )
   •   5 cups of water

Vegetables & Aromatics:
   •   1 medium onion, chopped
   •   5 cloves garlic, minced
. 3 tbsp olive oil
   •   ¼ cups sweet pepper, chopped
   •   1 ½ carrots, cubed
   •   3 celery sticks, chopped
   •   1 leek, chopped
   •   Green onions & cilantro (save some for garnish)
   •   1 tbsp tomato paste
   •   Jalapeños sliced

Protein (Optional):
   •   4 slices bacon, chopped
   •   3 smoky Polish sausages, cubed

Seasoning:
   •   1 tsp each: cumin, black pepper, turmeric, garlic powder, coriander,
1 tbsp tomato chicken bouillon
   •   Salt to taste
   •   Additional spices if needed

Instructions:

In a large pot, cook bacon and sausage.
Add onion, garlic, sweet pepper, celery, leek, green onion, and carrots, sauté until fragrant.
Stir in tomato paste, then add water and bring to a boil.
Add rice, lentils, red lentils, chickpeas, and all seasonings. Lower heat and simmer for 30-40 minutes, stirring occasionally, until tender.
Add in cilantro and adjust seasoning if needed.

Serve & Enjoy! Garnish with fresh cilantro and jalapeños.
