Had some extra chicken that I needed to cook. Something new. Pull apart, smoked chicken. Start with about

-4 Lbs of chicken breasts (trim off excess fat and grizzle)

-2 chopped onions, 2 to 3 chopped bell peppers, one jalapeño (your option to keep the seeds in), three cloves of garlic, 2 cups of chicken broth, and about 2 tablespoons of olive oil. Mixed together.

-Meat church "Fajita" seasoning, with an olive oil binder on the chicken and in the pan.

-on the Traeger at 275°, cook on upper rack until it hits 160.

-once at temperature, put the chicken breast inside of the pan. Cook about 90 mins.

-Shred chicken after 90 mins and return chicken to pan and cook until tender for about another 1 hour.

I HAVE CHICKEN FOR DAYS! Made soft tacos with this last night, but it can go on anything. Yum!!!
