Is this considered medium?
I grew up on well done, so eating a steak “right” is sort of new to me. Getting a cast iron has also changed my steak game and I’m finding I get a really good even sear on my steaks now, so I’ve expanded my cuts of meat. I usually go for a ribeye and most times it can be too much for me, but I think I found my love in petite steaks! It’s just enough.

    Good sear, thin gray band, rendered fat, medium rare on a leaner cut. Everything looks perfect.

    Edit, if I’m nitpicking and focusing on constructive criticism, it looks like you got anxious and cut into it before resting it long enough. A lot of spilled juices. But honestly, I do the same, so w/e. Lol. I usually eat my steaks with a starchy side like rice or potatoes, so I don’t care if a little au jus gets spilled. Lol.

    A perfect medium. Lots of juices though maybe rest more before cutting.

    It looks near perfect, and, unlike so many posts I’ve seen, ***you*** have a sharp knife! Congrats on this. The only misstep I see is that you have not let your steak rest long enough. I hope you invite me for dinner! (I can mop up all that leaked, but yummy juice with potatoes or bread).
