    I made a costco choice strip tonight, i noticed a difference in taste but it was still good!

    I keep wanting to buy a pack of the prime New Yorks but they are always right next to the prime ribeyes. Is there a reason you buy strips over ribeye?

    If you turned it on its sides and let it sear for about one minute per side, you would have rendered the fat and cooked it more evenly.

    Just had one tonight grilled with the Weber on the coals and then offset to 125 degrees F. Excellent!!

    Correct me if I’m wrong, but aren’t Costco’s strips blade tenderized? Not a huge deal, but definitely risking pathogens at 130 in the center.

    Unpopular opinion but I really dislike NY Strips. One entire side is always a big line of inedible gristle.
