Asparagus Pachadi (South Indian style Chutney) Rich in Fiber and vitamins.Try this amazing pachadi and let us know.

Ingredients:

Main:
– 1 bunch of asparagus, chopped into small pieces
– 1 small tomato, chopped
– 2 tbsp oil
– 3-6 green chilies (adjust to taste)
– ½ tsp cumin seeds
– 8-10 curry leaves
– 3 garlic cloves
– 1-inch piece tamarind (or ½ tsp tamarind paste)
– ¼ tsp turmeric powder
– Salt to taste
– 2 tbsp sesame seeds
– 2-4 tbsp peanuts
– 2 tbsp chopped coriander leaves

For Tempering (Optional):

– 1 tsp oil
– ½ tsp mustard seeds
– ½ tsp cumin seeds (Jeera)
– 2 dried red chilies
– Few curry leaves

Instructions:

1. Roast and Grind:
– Heat 2 tbsp oil in a pan.
– Add peanuts, cumin seeds, sesame seeds, green chilies, garlic, and curry leaves. Sauté until golden brown.
– Let it cool and then grind coarsely.

2. Cook the Asparagus Mixture:
– In the same pan, add the chopped asparagus, tomato, and coriander leaves.
– Cook for 5-7 minutes, or until the asparagus is tender.
– Add tamarind, turmeric powder, and salt. Mix well and turn off the heat. Let it cool.

3. Blend the Pachadi:
– Add the cooked asparagus mixture to the ground spice mixture.
– Blend into a coarse paste (no water needed).

4. Optional Tempering:
– Heat 1 tsp oil in a pan.
– Add mustard seeds, cumin seeds, dried red chilies, and curry leaves.
– Let them splutter, then pour over the chutney and mix well.

5. Serve:
– Serve your Asparagus Pachadi with hot rice, dosa, or idli!
