For All You Romantics Out There 🌹

Ingredients:
4 red capsicums (peppers) roasted
4 sun-dried tomatoes
1/4 cup extra virgin olive oil
250g Firm tofu
3/4 cup toasted cashews or almonds
4 tsp nutritional yeast
1 tsp smoked paprika
1.5 tsp dried oregano
150mL tomato paste
1 tsp sherry vinegar
1/3 to 3/4 cup milk (depending on thickness preference)
Handful of parsley
Salt and pepper to taste

Method:
Prick the capsicums before grilling (don’t worry if they burn a little, you will peel them later and that smokey outer charr will create the flavour you’re after!)
Immediately upon removal from the bbq, place the capsicum into a bowl and cover (so they will sweat in the residual heat, making them easier to peel)
Toast the nuts in a pan over medium-high heat until beautiful and golden
After 5-10 minutes, peel the capsicum to remove the outer skin and the worst of the char
Add them to a food processor along with all the other ingredients and process until smooth
Loosen with milk to your desired thickness and enjoy!
