Ended up with an inexpensive Ink Bird for my first unit.

I want to pull my steak off of my charcoal grill around 135 to 138F so I guess I'm going to sous vide this to 129 or 130F for 2 hours

Any critiques on this?

    Sous Vide makes it about as easy as it gets. Getting a good sear after is the hardest part. Even then it’ll be delicious!

    Just sous vide at 135, then chill them in the fridge for a couple hours before grilling on a very hot grill for max 1 min per side.
