Loaded these on with a bunch of ribs this weekend. ~40 minutes in they had color and cracking so I ice bathed and peeled. Mix the filling and throw in some of my cracked parm as a garnish. There were no leftovers

    We do this a lot. My kid loves smoked eggs. We also leveled up and made pickled smoked eggs with a bread and butter pickle brine, and they are awesome. When you open the jar it smells really smokey even after 2 weeks.

    Next level will be deviled pickled smoked eggs, maybe with a beet brine.

    Would I eat a dozen hard boiled eggs in a row? Absolutely not. Would I eat 2 dozen hard boiled egg halves if the yolks were mixed with mayo and seasonings and piped bank into the whites? You’re God damn right I will, sign me tf up.

    I always smoke em peeled with an aluminum pan full of ice beneath it for 20 min at 225. Turn out fantastic and smokey. The pan under keeps them from drying out and getting rubbery.

    Interesting. I boiled first, scooped out the yoke, then smoked. Texture was awful, like rubber. I’ll try it this way instead. How was your texture?

    I tried smoking a few eggs and you can’t taste the smoke imo. It’s not worth it. Maybe if you did a parboil, took the shell off and then smoked it it would taste better. I know you said it’s “subtle” but I think it’s your brain lying to you. I want it to work, but it just doesn’t.

    If you hard boil the eggs first then peel them and place them in the smoker, it is best to smoke at the lowest temp possible. My pit boss has a smoke setting that runs around 100 degrees and I leave them in for 45-60 minutes.

    After that I slice them and scoop out the insides, make my deviled egg stuffing, stuff them, and put them in the refrigerator for an hour or so.

    For added flavor, smoke a few slices of bacon until crispy and use bacon crumbles in your deviled egg mix.

    The smoke flavor is incredible you’ll never view deviled eggs the same way again.

    Hard boil them first, shell them, and smoke for 30. They’ll soak up a lot more smoke. Yours look delicious, no shade whatsoever.

    I make them by just smoking the yolks and leaving the whites unsmoked, but this is really interesting!

    I’d probably halve the eggs and separate the yoke, make the filling then smoke it all but separate.
