Ingredients:
For the Sliders:
1½ lbs ground chuck
2 sweet onions, thinly sliced
12 oz pre-washed sliced mushrooms
2 envelopes Lipton onion soup mix (divided)
1 tbsp minced garlic
2 thyme sprigs
1 bay leaf
4 tbsp avocado oil
¼ cup dry red wine
½ tbsp brown sugar
1 tbsp garlic salt (divided)
1½ tbsp complete seasoning (divided)
2 tsp black pepper
12-count King’s Hawaiian sweet rolls
Sliced Swiss cheese
Boar’s Head smoked Gouda cheese (cut into small chunks for stuffing)
1 tbsp melted butter
For the Au Jus:
Reserved half of sautéed onions and mushrooms
1½ cups beef broth
1 tbsp minced garlic
1 envelope Lipton onion soup mix
½ tbsp brown sugar
1 bay leaf
2 thyme sprigs
½ tbsp garlic salt
½ tbsp complete seasoning
Instructions:
1. Sauté the Onions and Mushrooms
In a large skillet over medium heat, add 4 tbsp avocado oil.
Add the sliced sweet onions and season with ½ tbsp garlic salt, ½ tbsp complete seasoning, and 2 tsp black pepper.
After 5 minutes, add sliced mushrooms and continue cooking, stirring occasionally.
Add 1 tbsp minced garlic, ¼ cup dry red wine, 2 thyme sprigs, and 1 bay leaf.
Cook for about 20 minutes, until everything is soft and caramelized.
Remove half of the onion and mushroom mixture and set aside for topping sliders.
2. Prepare the Au Jus
In the skillet with the remaining onion-mushroom mix, add:
1½ cups beef broth
1 tbsp minced garlic
1 envelope Lipton onion soup mix
½ tbsp brown sugar
1 bay leaf
2 thyme sprigs
½ tbsp garlic salt
½ tbsp complete seasoning
Let it simmer on medium-low heat for 15 minutes.
Once done, remove bay leaf and thyme stems before serving.
3. Prepare the Beef Patty
In a bowl, mix together the ground chuck, remaining 1 envelope onion soup mix, ½ tbsp garlic salt, 1 tbsp complete seasoning, and 2 tsp black pepper.
Press the seasoned meat evenly into a baking pan shaped to match the size of the 12-count Hawaiian roll sheet.
Bake at 350°F for 30 minutes, until cooked through.
4. Assemble the Sliders
Slice the full sheet of Hawaiian rolls in half horizontally, keeping the buns intact as a unit.
Place the cooked beef patty on the bottom half of the bread.
Top with the reserved sautéed onion and mushroom mixture.
Add a layer of Swiss cheese slices.
Place the top half of the rolls over the cheese.
Use a knife to cut small holes into the top of each bun.
Stuff chunks of smoked Gouda cheese into each hole.
Brush the top of the rolls with 1 tbsp melted butter.
5. Bake & Serve
Bake the assembled sliders at 350°F for about 10–15 minutes, until the Gouda is melted and the tops are golden.
Serve hot, with the au jus on the side for dipping.
