    Looks like hamachi/yellowtail, try yuzu yellowtail if you ever see it on a menu

  6. That’s hamachi or yellowtail. Looks like the fatty belly part too, which is the best part of the fish. Absolutely delicious

    Either hamachi or kanpachi.

    Both refer to the yellowtail fish but can be understood like the difference between lamb & mutton, juvenile & adult.

    Hamachi = lamb

    Kanpachi = mutton

    Kanpachi is firmer and even has a “crispy” bite to it like biting into the chicken drumstick tendon whereas hamachi is more tender and “melts”.

    It could also be used to distinguish between different species of yellowtail if they fulfil the above requirements.
